Carrot and Golden Beet Slaw

If you know me and have eaten with me in the last year or so, you’ve been served a version of this slaw. Mainly made up of carrots and golden beets, it’s my go-to when I need something crunchy, sweet and fast. I usually make a HUGE batch. That way, when I get hungry, I just scoop out a bowlful and add my protein “du jour”.

Basic ingredients are:

Two, three or more carrots, raw
A golden beet, the rough bits removed
Parsley, finely chopped
Cilantro, finely chopped
blanched almonds, toasted
whole Cumin seeds
Walnut Oil (or any mild flavored oil. Olive oil is too strong)
Japanese Rice Vinegar (not the really sweet one)

I don’t measure. Carrots and beets go into the food processor and get shredded. I throw the whole mess into a very large bowl, add the wet ingredients, the green herbs, the seeds, nuts and mix to taste.
