Dot’s Delicatessen, Fremont WA.
I was in the north Fremont area picking up my new glasses and right next door was this deli. It looked interesting so in I went. Being the Foodie that I am, I was immediately intrigued by what was inside the cases. However, Dot’s is a charcuterie, not a deli. Miles James, the guy on the left, was happy to let me try whatever was in the case, which included pickled pig’s feet (pickly), and head cheese (rich), neither of which I had tasted before. I liked them both. This is a meat lovers place.
They make their food Old World style. I did pick up a couple of items from the case – some breakfast sausage and another french style link, a tuolouse sausage.
Tools of the trade and some of the spices he uses.
