Soba Noodle Salad with smoked scallops
This is a riff on the recipe for Cold Sesame Noodles with Summer Vegetables. It’s also in the July issue of Bon Appetit. I used chard and arugula. The dressing is what really sends it. It’s made with Sriracha.
I’m also trying out a new fish monger in this recipe. Portland doesn’t have a lot of fresh seafood markets (Uwajimaya is in Beaverton, about a half hour away. I’m missing those). But I found one that’s been very well rated. So far, we’re pleased with what they sold me.
