Shallots, Still Life

These aren’t just any shallots. These came from the garden at Lorita’s (see this post). We let them hang out in the bed through the winter until June. Garlic and Shallots are the perfect crop for the winter. They need very little care and all the work happens underground in the dirt. We planted a few cloves and were rewarded with a pretty sizable bounty. They needed to try for a few weeks before we could use them. I got some of mine today. Couldn’t resist a photo…
